I love eggs. We are an egg eating family. I have some favorite things to go along with my eggs. In my opinion they are the best and I love to share my opinion.

GreenPan to cook in. I even saw a complete set at my Costco for $200 - which isn't in the budget right now - but I have two fry pans that I got from Target. For now, these will do. I love cooking my eggs in these pans. They are amazingly non-stick. I still use butter and olive oil for flavor but I don't have to and that's cool.

Feta cheese. I buy in bulk and use it all the time either scrambled with or sprinkled on top. I don't necessarily have a favorite.

My own recipe for extra green salsa. It has two very easy ingredients.... bottled salsa verde and spinach. I really love the Safeway Select Salsa Verde. It's good and cheaper that others which makes it a winner for me. So basically you just blend the spinach and salsa. I used to use the blender but I don't like to clean it so I got an immersion blender and it's my new fav.



There is another salsa that we got just yesterday at Costco. It is the best salsa I have ever tasted. Ever. Jess said so too. I love love love it and I had it on my eggs this morning and I want more of it! That's a picture of it over there. It's from Santa Barbara - and I like to buy locally. I can't find it on their website. So if it's not at your local Costco I don't know where you can get it. I'd try to save you some but it's not likely to last long.

Tortillas! Toast is okay but tortillas are great. I love the wheat corn mix ones by La Tortilla Factory. They are muy bueno.

So for breakfast I whisked three eggs with about 2 Tbsp of crumbled feta. Scrambled it in my GreenPan. Put it on my warmed La Tortilla Factory wheat/yellow corn tortillas and topped it with Salsa Fresca and chopped cilantro. Yum!

...and you are my favorite eggs with feta cook! I miss you fixin' me breakfast. Gonna look for the salsa fresca today @ Costco.

Craig would like a special request to have some of that salsa- either shipped up here, or crates of it when we get there.
